minced stuffed marrow
Serves 2 or 4
1 medium size marrow
1 red onion, chopped
1 small aubergine, cubed
1/2 can chopped tomatoes
grated cheese
250g lean steak mince
1 tbspn dried mixed herbs
Salt & black pepper
olive oil
1. Preheat oven to 180c.
2. Prepare the marrow by slicing lengthways and scooping out the seeds and string (put 'em on the compost heap). Scoop out some of the flesh and put to one side.
3. Brush the marrow with oil, season with black pepper, then place on a baking tray in the oven.
3. In a frying pan fry the onion and minced beef until the mince is brown. Add the aubergine, tomatoes, herbs and seasoning. Cook until about 1/2 the liquid is evaporated.
4. Fill the marrow halves with the minced beef mixture and return to the oven for approx. 30 mins or until the marrow flesh is soft.
5. Top with the cheese and place under a hot grill until the cheese is golden and bubbling. Serve straight way.
